Apericena (a-pair-ee-chaina) is a casual Italian social hour that begins as an aperitivo and effortlessly segues into a wine-filled dinner. At Dear Emilia, we are thrilled to launch our new Apericena Wine Education series, using this relaxed format as an educational platform where wine takes center stage, beautifully complemented by a lighter, multi-course dinner.
For this special installment, join our Wine Director, Scott Thomas, as we journey through our namesake region that we are so deeply inspired by: Emilia-Romagna. Known affectionately as the “belly of Italy,” this region is home to some of the world’s most iconic foods and dishes—so much so that we built our entire restaurant around it. Yet, what makes this territory especially unique is its incredible wealth of native grapes and wines that often fly completely under the radar or remain misunderstood.
Throughout the evening, Scott will lead an immersive, educational experience that unpacks all the vibrant nuances of i vini di Emilia-Romagna. Together, we will taste nine wines in total, ranging from the diverse styles of Lambrusco varieties to the richer expressions of Sangiovese, Trebbiano, and many other rare, indigenous grapes that are unique to this area.
While you sip and learn, our culinary team will serve a curated menu of regionally classic bites, followed by a dedicated pasta course and dessert, all designed to pair with the evening.
As one of only 22 Certified Italian Wine Experts globally Scott also co-runs the local Grappolo Food & Wine School. But beyond his credentials his true gift is his zero-pretension, conversational style that makes wine education entirely digestible. Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
