Apericena (a-per-ee-chaina) is a casual Italian social hour that begins as an aperitivo and effortlessly segues into a wine-filled dinner. At Dear Emilia, we are thrilled to continue our Apericena Wine Education series, using this relaxed format as an educational platform where wine takes center stage, beautifully complemented by a lighter, multi-course dinner.
For this special installment, join our Wine Director, Scott Thomas, as we journey through Tuscany's diverse landscape – from the sprawling coast to the Apennine mountains. Scott will lead an immersive experience unpacking the vibrant nuances of i vini della Toscana, focusing on the wide ranges of styles and grapes.
Together, we will taste nine wines, ranging from crisp whites like Vernaccia and Vermentino, to traditional method sparkling, as well as native red grapes like Ciliegiolo alongside the noble Sangiovese where we’ll compare multiple appellations such as Brunello di Montalcino, Chianti Classico, and Vino Nobile di Montepulciano. Let's just say Tuscany excites us in every way.
While you sip, our culinary team will serve curated stuzzichini (small bites), a dedicated pasta course, and dessert, intended to complement every glass.

Scott joined Restaurant Olivia as wine director in April 2023, bringing decades of experience in wine and hospitality. He is also the founder of Grappolo Wine School, which he established in 2022. Scott is highly passionate about educating others and aims to share his love for wine and food cultures with passionate enthusiasts and industry professionals.
Scott is one of only 22 certified Italian Wine Experts globally, holds certifications as a Certified Wine Educator and Certified Sommelier, and recently received a Master's degree in Wine Culture from the University of Gastronomic Sciences after spending two immersive years in the Barolo region of northern Italy. He has also earned the esteemed titles of Italian Wine Ambassador, certified Italian Wine Educator, and official Orvieto Ambassador.
